I love the ride of a handmade traditional sew-up tire, but can live without the hassle of flatting. The Veloflex Extreme has a puncture protection layer that reduces the chance of a flat, at least from tiny pieces of glass etc. Other tires do the same, but this is the only one I know of that keeps the high thread count casing (350 TPI) that delivers a supple, confidence inspiring ride.
